Biography: Ajifolokun Oluyinka Mary is a Ph.D. Candidate in Microbiology at the University of Zululand, South Africa. Her areas of specialization include food safety and security, food nutrition, food microbiology and food products developments. Her research line is focused on optimization, exploitation and commercialization of underutilized agricultural products to enhance food security, safety and nutrition in developing countries.
